
Corn & Tomato Salad

½ cup frozen corn kernels
½ cup diced fresh tomato
1 Tbsp diced cilantro
2 Tbsp. minced red onion
½ tsp olive oil
1 tsp balsamic vinegar
Mix and let marinate for 15 – 20 minutes stirring gently a couple of times.
Pairs well with Maple Pork Chop
