
Growing Pumpkin Oatmeal

7 SP / 7 I track bites / 337 Cal
½ cup dry old-fashioned oats NOT INSTANT it will not work
1 packet sweetener
¼ tsp cinnamon, vanilla
Dash salt
¾ cup skim milk
¼ cup pumpkin puree
¼ cup berries
¼ oz sliced almonds
2 boiled eggs – to be eaten separately
In a nonstick pan combine oats, sweetener, spices, & milk. Mix in an additional 1 ¼ cups water. Bring to a boil and reduce to simmer. Add pumpkin and stir and cook for 12 – 15 minutes. Transfer to a bowl and let set for 10 minutes or until thick add berries and almonds.
Serve with boiled eggs – If you do not want eggs you can add 2Tbsp of protein powder to the oatmeal after it’s cooked increase your vanilla to ½ tsp.
