4 oz. raw extra-lean ground beef (at least 96% lean) or turkey burger
2 tbsp. canned black beans, drained and rinsed, mashed
1 Tbsp each minced onion, green pepper
2 tbsp. old-fashioned oats
2 tbsp. salsa
2 tbsp. chopped fresh cilantro
1 1/2 tsp. taco seasoning
Spray a large microwave-safe mug with nonstick spray. Add all ingredients and mix until uniform. Smooth out the top.
Cover and microwave for 3 1/2 minutes, or until beef is cooked through. Top with more salsa if desired.
